Tatsuno Castle Town is a historically rich area where you can still find atmospheric streets lined with old K aro-mon gates (Chief Retainer's gates), samurai residences, and soy sauce and koji (malted rice) breweries. We will propose a special itinerary that allows you to fully experience the charm of Tatsuno, tailored to your interests. Ido Koji-ten is a specialty shop dedicated to koji (malted rice), crafted with time-honored methods unchanged since its founding. They produce and sell not only koji itself, but also homemade original miso, yuzu miso, and amazake, along with other koji-based food products.

Tatsuno is a town where 400-year-old soy sauce breweries still thrive, and its unique fermentation culture continues to live on. This class offers a complete experience: learning about, tasting, and creating with this local fermentation culture. Create your own MY Soy Sauce by adding your favorite natural dashi or spices to freshly pressed raw soy sauce. This experience, which includes an explanation of soy sauce ingredients and how it's made, as well as a soy sauce tasting comparison, is enjoyable for both children and adults. An additional fee applies.
