Each preparation changes the texture and flavor completely, and your guide will suggest which order to try them in based on your taste. There's a performance element too — some of the preparation happens right in front of you, and it's worth putting the phone down for. Japanese beer and sake pair beautifully with the richness. You grill it yourself over the flame, at your own pace, and your guide shows you the timing — which cuts need seconds, which need a little patience. Your first drink is included.
